I found this recipe in a "Real Simple" Magazine years ago and only just pilled out the page I had ripped out. I made a few modifications to it and we were SO thrilled with how yummy it was!
3 Tablespoons of olive oil (I used ghee instead!)
1 1/2 pounds of flank steak
kosher salt and black pepper
1 1/4 cups of quinoa
2 cloves of garlic, thinly sliced
1/4 cups of pine nuts
2 cups of baby spinach
1/4 cup crumbled feta
2 Tablespoons fresh lemon juice
Heat 1 Tablespoon of the oil in a large skillet over medium-high heat. Season the steak with 1/2 teaspoon each salt and pepper. Cook to the desired doneness, 4 to 6 minutes per side for medium rare. Let rest before slicing.
Cook the quinoa according to your favorite method. I used vegetable broth - 2 1/2 cups broth for the 1 1/4 cups of quinoa and simmered for 20 minutes.
Wipe out the skillet. Cook the remaining 2 Tablespoons of oil, the garlic, and pine nuts over medium heat, stirring until golden, 2 to 3 minutes. Fold into the quinoa with the spinach, feta, lemon juice, and 1/2 teaspoon each salt and pepper. Serve with the steak.
Serves 4. Took me maybe 30 minutes start to finish.
